THE FIRE BYRD BURGER. AN EASY, TASTY BURGER THAT HITS THE SPOT
After the onset of the Pandemic, I had lost my prior company. I took the opportunity to head down to Barbados in the Caribbean and set up a street food cantina in Worthing Square. I took my dad’s classic Indian recipes and fucked them up and turned them into concept street food. This recipe was something I created using my father’s recipe for kebabs as the foundation.
The shit you will need:
2 LBS of ground chicken thighs or ground sirloin
1 Baseball sized yellow onion
8 Cloves of garlic, grated
1 Jalapeno pepper, finely chopped
1 TBS of ground cumin
2 TSP Red Chili powder
1 TBS soy sauce
2 TSP Worcestershire sauce
Salt and pepper to taste
1 Egg
Get a bowl, and mix all of the above together, then saran wrap and let sit in the fridge for an hour or so. Once ready, shape into EIGHT patties, ¼ each, shape to your liking…some like them thick, some like them thin…
Cook on high heat on a grill or cast iron skillet, cook to your temperature liking, Personally, I am at 3 minutes, flip and 2 more minutes. Let rest, put it on a bun with gluten, add your choice of condiments and send us an email telling us how much you loved them.
